Step 1 Preheat oven to 425 degrees.

Step 2 In a food processor*, pulse apricots into small pieces. Add almonds and onion pulsing until ingredients are small pieces. Add lamb, egg and spices. Pulse until combined.

Step 3 With a medium cookie scoop (#40) form ground mixture into 1-inch balls. Place balls into a 9 x 13 pan sprayed with nonstick cooking spray. For a crispier crust, place meatballs individually into slots of a mini muffin pan. Bake for 15-18 minutes. Remove from oven when internal temperature is 160 degrees.

Step 4 Combine all ingredients in a small mixing bowl. Set aside.

Step 5 Great for pita sandwiches with freshly diced tomato, cucumber and a sprinkle of feta.

Step 6 *If you do not have a food processor, all items can be hand chopped and mixed in a mixing bowl.
